Emilia Romagna – Balsamic vinegar of Modena
The history of vinegar dates back to the ancient Romans who used the cooked grape monster as a medicine or in some recipes in the kitchen; but it is from the early 1800s that it begins to be recognized internationally. However, it will only be in 2009 that it will be included by the European Commission in the register of PGI productions. The authenticity can be recognized by the yellow and blue logo on the label and the wording “Protected Geographical Indication”. There are only two provinces that can produce this excellence: Modena and Reggio Emilia.
